40g Kilishi
140g Noodles 2 small size packs
2 tablespoons Ground nut oil
5 pieces Green beans
2 medium size Carrot
1 medium size Green bell pepper
1 medium size Red bell pepper
1 medium size Onions
1/4 teaspoon (dry powder) Garlic optional

Nutritional information

Unlike popular belief, noodles contain high amount of calories. In this recipe, about 100 calories is obtained from noodles. Although noodle recipes, when enriched with protein and veggies could make a balanced meal, you should exercise caution in the use of seasoning that comes with the noodles. The seasoning contains high amount of salt that is not suitable for persons with high blood pressure or kidney disease.

Kilishi Noodles

One of the delicacies of the north, which by far has become a national delicacy, in Nigeria is kilishi. Although you can find it everywhere in the country, it is mostly prepared in the north.

Kilishi is meat that has been cut into very thin slices and preserved through a long drying process. It is another recipe where kuli-kuli is added for texture, color and taste.

Kilishi is usually a snack but I have used it as protein source in this noodles recipe.
Noodles is fast becoming a stable food in Nigeria. For lovers of noodles (who worry about noodles not enriched with protein and veggies), do not despair. This recipe is well-balanced. It has all the nutrients you need.

Cooking the kilishi

Kilishi is very hard to chew because it is very dry. Add water to it in a pot and cook to soften it.

Preparing the veggies

Wash and slice green and red bell pepper, carrots, onion. In another pot, add noodle seasoning from one of the noodle packs (Keep away the other seasoning from the second pack). Add garlic powder and groundnut oil. Stir-fry for 2 minutes.

Add noodles to the cooked kilishi in the boiling water. Keep level just below the noodles ( not to overcook it). Cook until soft but not fully cooked.

Add the stir-fried veggies to the noodle pot and stir all ingredients.. Lower heat and allow to simmer.

Serve in a bowl. Garnish with parsley leaves (optional).


Special Note!

Do not add salt in this recipe. Remember kilishi is salty already while noodle seasoning has high amount of salt.

Use moderate amount of water in cooking the noodles-except you are making noodles soup.
