1/2 teaspoon Salt
1/4 teaspoon Cinnamon
2 Egg
60ml Vegetable oil
150ml Water
Baking soda
Honey
Beetroot

Wheat Flour Sticks

Wheat sticks is great for breakfast and as a snack. It is a healthy snack. We call it "Sandar Jauro" meaning, "Jauro's sticks" in Hausa (Jauro is a fulani male name). I am yet to know how the name of this snack came about. I will ask my fulani kinsmen.

Sandar Jauro is normally made from maize flour and sugar and is usually very hard. But I added more ingredients to improve the taste, make it softer, more nutritious and healthier.

    Whole wheat is a wholesome grain, high in calories (339 calories in 100g of whole wheat). It contains a high amount of Magnesium (supports normal cell function) and Potassium (important for nerve function) both required for normal body function.

    Whole wheat contains a high amount of dietary fibre, which aids digestion. It is also recommended for weight loss diet.

    The less processed the wheat is, the healthier it is for you. I used whole wheat flour which I processed for this recipe. Locally ground whole wheat flour (which has undergone very minimal processing) is now available in local stores in the north. The wheat flour sold for bread, pizza, pasta etc. are highly refined and have lack most of the nutrients in whole wheat.

    The main protein found in wheat is called gluten. It is gummy (like glue, hence the name glu-ten). It is the gluten that gives wheat its elastic form.

    Some people are unable to digest gluten;they are gluten-intolerant. In these people, their body immune system attacks the gluten and, also, attack their digestive tract. This could predispose them to a disease called coeliac disease.

    If you are gluten-intolerant, I recommend you use another grain for this recipe, e.g. maize flour.

    Making the dough

    Pour yogurt in a bowl. Add eggs, sugar, salt, vegetable oil and whisk until smooth.
    Pour wheat flour in a bowl. Add baking powder and cinnamon.
    Add yogurt mix and water. Mix and knead until a smooth dough is formed.
    Wash and cut fresh beetroot. Insert into the dough (to give it some reddish color).
    Cover and stand for 10 minutes.

    Making the wheat sticks

    Knead dough again and flatten on a board. Cut into long strands.
    Fry in hot oil until brown.

    Serve with honey dip.
